CONCLUSIONS Greater consumption of potatoes, especially french fries, was associated with a higher T2D risk, independent of BMI and other risk factors.

Two things strike me about this study.  First, the fact that someone decided to study this topic at all is pretty amazing.  Two, the researchers actually discovered a correlation between potato consumption and DM2 risk.

I’m surprised the MSM hasn’t picked up on this study.
